Italian Veggie Soup

Italian Veggie Soup Seasoning
Yields approximately 3 - 4 quarts when prepared as per our recipe
Ingredients: Basil, granulated garlic, fennel seed, thyme, cr. red pepper, anise
Recipe:
4 Cups Eggplant
1 Can Vegetable Juice
1 Cup Onion
1 Cup Green Pepper
1 Cup + 2 tbsp. Water
1 Cup Celery
1 Can Tomato Sauce (15 oz)
1 Cup Zucchini
1 Can Green Beans (16 oz)
1 Cup Carrots
1 Can White Beans (optional)
1 Pkg. 'A-Roma-Zuppa'
Parmesan Cheese (optional)
2 Tbls. Olive Oil

Cut all Fresh Veggie's (listed in left column above) into cubes
Saute & cut Veggie's and 1 Pkg. 'A-Roma-Zuppa' in Olive Oil over medium heat until Veggie's are tender
Add the Vegetable Juice, Water, Tomato Sauce and Beans (listed in right column above)
Cover and Simmer 30 - 40 minutes
Salt to Taste if desired
NOTE: After completing the first three steps you may simmer in a Slow-Cooker several hours
